Waffles are one of my favorite breakfast foods. I love how they are crisp on the
outside and soft on the inside. Don’t you?
This morning I decided to make some and they turned out great! Even my boyfriend thought so. He isn’t too fond of coconut and he loved them! I was worried he might taste the coconut flavor, but it’s very subtle. I think the flavor was so subtle because I did not use canned coconut milk. I actually used the SoDelicous unsweetened vanilla kind, but feel free to use canned coconut milk for a richer coconut flavor. Isn’t it great you don’t need eggs for these waffles? Whether you’re vegan or not, you will love these!
(Yield: about 8 waffles)
Ingredients
3 cups all purpose flour
1/2 tsp salt
2 Tbs baking powder
1 tsp pure vanilla extract
1/3 cup orange juice
1/3 cup coconut oil
3 cups coconut milk
1 Tbs agave nectar or sugar (optional…if you want your waffles a little sweeter)
Directions
1. Using a medium size mixing bowl, add in the flour, baking powder, salt. Stir to combine. Next add all the wet ingredients- milk, oil, orange juice, and van ill extract. Mix until the batted has smooth consistency but do not over mix.
2. Spray waffle maker with nonstick cooking spray and pour batter.
