For those looking for a quick, easy, light, and crowd pleasing summer dessert this is for you! The combination of grilled pineapple with a sprinkle of cinnamon is just too good to pass up. What makes this dessert even better is that it is topped with a small scoop of vanilla bean ice cream (or frozen yogurt) and the goodness of homemade caramel sauce. I guarantee you’ll have people drooling.
Yield: Serves 6-8 people
Ingredients
- 1 Riped pineapple, cut into 1 inch rings or circles (I used pre-sliced rings from Trader Joe’s)
- 1-2 teaspoons ground cinnamon
Directions
- Prepare a hot fire in a charcoal grill or heat a gas grill. Lightly coat the grill rack with non-stick cooking spray.
- Place pineapple and cook until caramelized. This will take about 5-7, depending how hot your stove or flame is. (Pineapple should turn lightly brown with grill marks) Flip pineapple and repeat.
- Remove pineapple from grill and allow to cool for 5 minutes. Pineapple should be slightly warmed when served.
- Top pineapple with ice cream and drizzle caramel sauce. Serve immediately.
Homemade Caramel Sauce

Ingredients
- 1/2 cup packed light brown sugar
- 1/4 cup half & half
- 2 tablespoons salted butter
- 1 teaspoon pure vanilla extract
Directions
- In a small saucepan, combine brown sugar, half & half, butter, and salt on medium heat. You’ll want to carefully whisk the mixture for 5 minutes or so. Once the mixture thickens, add in the vanilla and cook for another minute. Remove mixture from heat and cool for 5 minutes. Transfer mixture into a small jar or plastic container and refrigerate until you’re ready to use it.
Side note: The mixture will be thick. When you’re ready to use it, I suggest microwaving it for 10-12 seconds in the microwave. Stir immediately and the sauce will thin out.
