Okay, it’s about time I posted an updated version of my favorite waffle recipe. If you remember from a couple of posts back, I blogged about my Light and Crispy Waffles. These aren’t your typical waffles: they’re light and airy with just the right amount of crunch in each bite. To top it off, they are quick and easy to make!
While I still enjoy my old recipe, I wanted to tweak it a bit in order for my fiancé (yes, you heard me correctly 😉 to be able to enjoy these as well.
So, what makes these vegan? Well, for starters, if you didn’t know, Bisquick is vegan. Also, I decided to completely remove the egg and increase the amount of club soda.
The result? The waffles made with this recipe turned out even better than the last!
Whether you’re vegan, have an egg allergy, or have just run out of eggs and want to enjoy some waffles, this recipe is your new go-to.

- 2 cups Bisquick
- 1 1/4 cup club soda (I use a freshly opened 12 oz can)
- 1/2 cup vegan buttermilk directions below
- 2 tbsp oil
- 1/2 tsp vanilla extract
- 1 tbsp sugar
- 1 pinch Salt
- pinch nutmeg optional
Heat waffle maker.
In a medium bowl whisk together the vegan buttermilk, oil, and vanilla. Carefully mix in the Bisquick. Batter will be thick. And lastly, add in the club soda. The batter should look a bit thin and runny.
Spray waffle make with non-stick cooking spray and pour batter using a 1/3 cup. Close waffle iron and cook until light turns on. Serve immediately with your favorite toppings and enjoy!
**Vegan buttermilk
1/2 cup non-dairy milk + 1 tsp apple cider or white vinegar.
Whisk together and allow it to sit for 1-2 minutes or until it thickens.

What’s 1 1/4 cups in ounces? And how is it vegan buttermilk if there’s no butter? I don’t understand this.
