Hello, bakers! Tonight is a late post for me, but I couldn’t help myself from posting. This evening I decided to do something special for my boyfriend, so I made a mixed berry crumble for dessert. Now that berries are in season, I thought making a mixed berry crumble was appropriate. What I love about fruit crumbles is that you can add any kind of fruit—the possibilities are endless! I used a combination of blackberries and blueberries with a spiced crumble topping, but I think that next time I will add raspberries and possibly strawberries. To top off our crumble, we had some vanilla ice cream to go with! My boyfriend loved it and wants to me to make it again! If you’re looking for a superb and simple dessert, make this! It yields the perfect amount for two people and now that summer is approaching, it is a great and refreshing treat!

Yield: Serves 4
Ingredients
- 2 cups fresh or frozen blackberries
- 1 tablespoon sugar
- 1 teaspoon cornstarch
- 1-1/2 teaspoons water
- 1/2 teaspoon lemon juice
- 1/2 cup quick-cooking oats
- 1/4 cup all-purpose flour
- 1/4 cup packed light brown sugar
- 1/2 teaspoon ground cinnamon
- small pinch of nutmeg
- 1/4 cup cold unsalted butter
- Vanilla ice cream (optional but recommended)
Directions
- Place blackberries in a greased four 4-6 oz ramekins and on top of a baking pan (This helps if the juice of the berries spill). In a small bowl, combine the sugar, cornstarch, water and lemon juice until smooth. Pour over berries.
- Combine the oats, flour, brown sugar and cinnamon; cut in butter until crumbly. Sprinkle over berries.
- Bake, uncovered, at 375° for 20-25 minutes or until filling is bubbly. Wait 15 minutes to cool then serve warm with ice cream.
