Have you ever had an açai bowl? If not, then you’re definitely missing out! Not only is it packed with flavor, but it’s a healthy way to incorporate fruit in your diet.
Açai bowls are basically a thick smoothie topped with granola, fruit, coconut flakes, and so much more! You can easily personalize it to your liking. For me, I always enjoy my açai bowls with granola and bananas, but the other fruit toppings depend on what I have on hand. I love using mixed berries, or sometimes I use mango and pineapple! It’s so good! You can also add in some protein powder and this can easily be eaten for post workouts!
In honor of 4th of July, I decided to make an açai bowl with half a banana, açai pulp, and blueberries. Then, I topped it with granola, blueberries, coconut flakes, and goji berries. The result? A perfectly healthy, delicious, refreshing and festive treat!

Yield: 1 serving; 1 person
Ingredients
- 1 packet açai pulp
- 1/2 of a medium banana
- Handful of blueberries, divided
- 1/4 cup coconut water (can sub milk, apple, orange, or pineapple juice instead)
- 1-2 Tbs your favorite granola
- Goji berries
- Unsweetened coconut flakes
Directions
In a blender, combine açai pulp, banana, 1/2 of the blueberries, and coconut water. Blend until smooth.
Pour açai mixture into a bowl and top with granola, the remaining bluberries, coconut flakes, and goji berries.
Serve right away and enjoy!
