
Zucchinis are very unique vegetables. They can be grilled and served as a side, added into pasta dishes, or they can even be included in desserts. Say, what? Yup. It’s true. And you know what that dessert is? It’s zucchini bread! Personally, I love eating zucchini in any form. I find it delicious. So, when I was given a couple of zucchinis, I thought I would make zucchini bread. And not just any old zucchini bread, but chocolate zucchini bread! Any dessert that includes chocolate is simply amazing.
The chocolate zucchini bread I made turned out wonderful. It was very moist, delicate, and intensely chocolaty! I also added some chocolate chips and it was perfect. The aroma of the zucchini bread baking is enough to make one drool. For those who don’t really love zucchini, give this recipe a try. I promise that you can’t taste or even see the zucchini! This zucchini bread is perfect to serve with coffee in the morning or on its own.
Yield: 2 loaves
Ingredients:
- 1 3/4 cup sugar
- 1 cup canola oil
- 2 eggs
- 2 teaspoon pure vanilla extract
- 2 1/2 cups AP flour
- 1/2 cup cocoa powder (unsweetened)
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 heaping teaspoon espresso powder
- 1/4 teaspoon baking powder
- 2 cups shredded zucchini
- 1/2 cup chocolate chips, optional
Directions:
- Preheat oven to 350 degrees. Spray two loaf pans with nonstick cooking spray.
- Using a large bowl, combine sugar, canola oil, eggs, and vanilla until everything is combined. Next, in a smaller bowl, add the flour, cocoa powder, salt, baking soda, cinnamon, espresso powder, and baking powder. Mix well.
- Slowly add the dry ingredients to the wet in batches. Do not over mix. Stir in the zucchini and if desired, chocolate chips.
- Bake for 45-55 minutes or until the center of the zucchini bread (check with toothpick).
