I wanted to make a dessert that I could whip up no problem and not feel guilty about eating. These, right here, are it! They only require 2 ingredients. Yes, TWO. How easy is that?

(Yield: makes 12-14 muffins)
Ingredients
- 1 box spice cake mix (I used carrot)
- 1 can pumpkin puree (15 oz)
- Mini chocolate (or white chocolate) morsels (optional)
Directions
- Preheat oven to 400 degrees. Line muffin tin with cupcake liners. Combine cake mix and pumpkin puree; mix well. Mixture will be thick.
- Using an ice cream scooper, scoop batter in muffin tin accordingly. Place muffins in the oven for 11-12 minutes. Insert a toothpick to ensure muffins are done.
- Let muffins cool for a few mins. Best serve when warm. This is totally optional, but after removing the muffins from the oven, sprinkle some mini morsels on top and let them melt in. They taste even better! 😉
